Skillet Cornbread
Crisp cast iron edges, a tender golden crumb, and just enough sweetness. The cornbread we make for every pot of chili and Sunday supper.

Ingredients
- 1¼ cupcorn meal
- 1 cupall-purpose flour
- ½ cupsugar
- 1 tbspbaking powder
- ½ tspsalt
- ¼ cupoil (or melted butter)
- 1 cupmilk
- 1egg

Preheat the oven to 400°F with a greased cast iron pan inside.

Mix the dry ingredients and make a well in the middle.

Add the wet ingredients and mix until lumpy.

Put a pad of butter in the hot pan and let it melt.

Pour the mix into the hot pan, then spread and smooth the top.

Bake 20 to 25 minutes, until a toothpick comes out clean.

Remove the cornbread upside down onto a plate.
